Spiced Rum – Time to get Tiki with Tenth Ward!

Hey! Did ya know that Anthony Whiting, our Head Distiller is from New Orleans? AND that he has a background specializing in rum distillation?! Well just for that reason we decided to make somethin’ real special for our Bottle Club this quarter. Keep reading for more info about how we brought his specialty here to Frederick and some suggested cocktail recipes!
So what’s in it?
The base of this recipe is distilled from 100% molasses sourced from Domino Sugar here in our home state. Now don’t let that fool ya! Sugar cane is typically grown in the south so Domino sources the sugar from Louisiana then processes it into molasses in their factory nearby in Baltimore. Once distilled into rum, our production team infuses the product with cinnamon, chicory, clove, nutmeg, ginger, cardamom, allspice and cayenne pepper (my favorite part!). Anthony then hand cooks caramel and sweetens the rum with it.
The Process
Starting by mixing molasses and water at 90 degrees, we’ve essentially created a “mash”. Secondly, the yeast is pitched and will eat up to 90% of the sugar in the mash, producing alcohol. The mash is distilled and the initial distillate collected; this distillate is what we call low wines (no higher than 75 proof, unfiltered alcohol). Next, the low wines will be distilled again, resulting in a white rum. The rum is proofed down to 125 with water and then infused via maceration for four weeks. Finally, we finish by making a house caramel and add that to the rum with water to bring it down to 80 proof. Lastly it gets filtered and bottled!

Nose: Rich and brown sugar sweetness, slight clove.
Taste: Sweet vanilla, hints of dark fruit, baking spices with burnt caramel, cinnamon and a slight kick of pepper and spicy heat on the finish.
How to Mix It
Rum Runner
1 oz Tenth Ward Spiced Rum
1 oz banana liqueur
2 oz pineapple juice
0.75 oz lime juice
0.5 oz grenadine
Garnish: brandied cherries
Garnish: fruit of your choice- lime, orange, pineapple, etc.
Pour the ingredients into a cocktail shaker filled with ice. Shake and strain into glass. Top with ice and garnish. Hint: sink the grenadine at the end by pouring it down the side of the glass for an ombre effect.
Cuba Libre
1.5 oz Tenth Ward Spiced Rum
Cola
Garnish: Lime wheel
Pour rum into a glass, fill glass with ice and top with cola. Garnish.
Painkiller
2 oz Tenth Ward Spiced Rum
3 oz pineapple juice
1 oz orange juice
1 oz coconut milk
Garnish: shaved nutmeg
Garnish: fresh mint
Garnish: fruit of your choice, pineapple, orange, lime
Pour ingredients into a glass, fill with ice and shake vigorously. Strain into a glass and fill with ice. Shave fresh nutmeg on top and garnish.
